Dan Stacy is the Owner and Executive Chef of Royal Fig Catering. With well over a decade and a half of catering and fine dining experience, Dan has worked at various restaurants and country clubs in the Austin and Houston areas. Arriving in Austin in 2008 from a 2 year stay in New York City, Dan cooked under Harold Dieterle, the winner of Top Chef, Season 1 at his restaurant, Perilla, in the West Village. He has also cooked for many celebrities at the famous Soho House members only hotel featured on the TV Show, “Sex and the City.”

A food enthusiast and experienced in marketing and sales, Kristen spent 10 years using her talents expanding arts-in-education programs in Cleveland, Ohio, New York City, and Austin. An experienced event planner, Kristen is known for her creativity and attention to detail, having facilitated conferences, corporate events, galas, dinner parties, large scale fundraisers, workshops, and hundreds of Austin weddings.

Jesse has spent his whole working life in the hospitality industry. After running multiple award winning restaurants and catering companies in the Nashville, Tennessee area, Jesse relocated to Austin several years ago to experience the city’s thriving food and event scene. Joining Royal Fig Catering over 4 years ago, Jesse has really grown to love the Austin food scene and wedding industry. Having done hundreds weddings and other special events with Royal Fig, he knows what it takes to make your event uniquely yours.

Alyson is a highly experienced professional in the hospitality and catering industries, bringing a well-rounded skill set and unique perspective to her position at Royal Fig. Prior to moving to Austin, Alyson worked alongside some of Rhode Island’s most notable non-profit organizations, coordinating large-scale community art festivals and events. She has orchestrated a wide range of events, including weddings, corporate and private parties, festivals, conferences, and fundraising galas. Alyson has based her career on developing strong relationships with her clients, thereby striving to truly understand their vision and needs. Betsy moved to Austin to pursue a career in the event industry. Prior to joining Royal Fig, Betsy coordinated fabulous events in Austin for several venues, event planners and catering companies. A newlywed herself, she enjoys spending her free time with her husband, cat and great Dane, Belle. Betsy goes above and beyond for each client in hopes to make their event stunning and stress free!

BRIE OGLESBY – EVENT COORDINATOR
Brie Oglesby was born and raised in the Austin area. She spent her childhood cooking alongside her father and learning the value of organic, locally raised ingredients. She brings to Royal Fig a vast experience in many different dining aspects ranging from pairing the perfect craft beer with custom bratwursts to fine wine with high end ingredients. After years in the restaurant industry, Brie realized her true passion was working special events. She joined Eclipse Event Co. where she coordinated numerous weddings and corporate events all over Austin and the Hill Country. Brie is truly committed to every detail of your event, her planning background infused with her familiarity of 5 star dining helps her create a stress-free, memorable experience for your event.

CLAUDIA OZUNA – EVENT COORDINATOR
Claudia has been working in the catering industry for over 10 years running weddings, corporate and private events. Having moved here 5 years ago, Claudia now calls Austin and Royal Fig her home. People have always been her passion and nothing makes her happier than having a successful event (except maybe the color pink!). She is a proud mom of a wonderful and loving college student and wife to a very understanding husband who puts up with her pink obsession one item at a time!

GINA BENZING – Front-of-House Manager
Gina comes to Royal Fig with 10 years of Front of House experience in a wide range of settings, from customer driven restaurants to private country clubs, always in a leadership role and cross trained into multiple positions. She relocated to Austin in 2015 in search of a laid back culture, good music, and lots of food! She found a family at Royal Fig shortly after her move and through multiple roles within the company has found a position well suited to her organization oriented and multi-tasking personality! She enjoys getting to know our staff at a personal level and knowing each event is made better through their talent and attention to detail.

Native to Portland, Oregon, Jackie moved to Boise and then to Austin in 2013. With more than 12 years of customer service experience in various sectors of the food industry, Jackie developed a passion for sustainability and local food sourcing. When Jackie isn’t creating special events and weddings with Royal Fig, she loves spending time exploring the outdoors with her daughter.

LAILA GARCIA – HEAD CHEF
Laila moved to Austin from her small hometown near Corpus Christi six years ago, to start her own adventures and career in the food industry. Food has always been her passion and Austin’s colossal palate for exceptional food inspired her to attend culinary school and become part of it. Chef Laila has worked at an assortment of places throughout Austin to hone her skills, including The Hills of Lakeway Country Club, where she met Chef Dan many years ago. Laila chose to further her career in event catering by joining the team at Royal Fig has risen to become a valued leader among the culinary team.

Jeff was born and raised in the south, and his love for the food and culture are clear. Jeff started cooking in Memphis in 2002, and hasn’t left the kitchen since. His passion for food took him to many kitchens, where he learned techniques and skills to propel his career. Coming to Austin in 2006, Jeff became the sous chef for Cipollina Bistro in the Clarksville neighborhood, where he helped create a farm to table menu. After leaving Cipollina, Jeff worked at Whole Food Market for the next few years, working in the kitchens and produce departments until coming to Royal Fig full time.
ANA BLACK – SOUS CHEF
Ana was born and raised in Los Angeles and has been in the industry for over 15 years. At an early age, she taught herself how to cook and realized her true passion. Shortly after enrolling in culinary school, she started working with Patina Catering in Los Angeles, who thanks to her Chef at the time, helped shaped and reinforce her passion for food. After 5 years she decided to further her career by moving to Las Vegas where she worked at the Mirage Hotel and Casino as well as Red Rock Resort. Tired of the city life, she took a sabbatical and moved to the midwest before moving to Austin in 2015 where she found Royal Fig. She lives with her husband and her two “girls”, Roxy and Lala. Ana is happy with a good meal and a glass of wine!
Amy was born in Missouri but grew up in Lafayette Louisiana, the Heart of Cajun Country! Her culinary career has spanned a 20 year time period with accomplishments ranging from an overseas military tour in the United States Air Force to studying French pastries at Le Cordon Bleu in Paris, France. Amy worked at LeRosier in New Iberia, Louisiana, an amazing fine dining restaurant and Inn, located on the Bayou Teche. While there, she accompanied the late Chef Hallman Woods to New York City to prepare a special meal at the James Beard Foundation. Through the years, she has been a competent restaurant manager, catering chef, lead line cook and baker. Prior to joining the Royal Fig family, she made organic energy bars at a local Austin company. She also works at a yoga center preparing vegetarian food for retreats, with an emphasis on ayurvedic medicine. Most of her spare time is spent perfecting recipes, collecting cookbooks and hanging out with her super cool kids, Robert and Jack.
JOEY TROBOUGH – SOUS CHEF
Originally from Washington State, Joey moved to the Austin area 12 years ago, after finishing culinary school in Oregon. He gained experience working at several different restaurants in and around the Austin area. In 2008, he started work at the Oasis and quickly worked his way up running the catering department, for one of the largest restaurants in Austin. After 8 years, Joey left the Oasis seeking a new challenge and adventure which brought him to Proof and Cooper and the world of farm to table cooking. Here he gained a new respect for ingredients and where they came from, learning new techniques and skills. Still seeking the excitement, stress, and chaos of catering and the new-found love a farm-to-table Joey discovered the Royal Fig. This has been the perfect match for him.
Drew was born and raised in Cleveland, Ohio but is happy to call Austin his home. A jack of all trades, Drew brings a multitude of skills to Royal Fig to ensure that events run smoothly behind the scenes. It makes him happy to provide a service which contributes to other people’s good times and happy days, and he couldn’t be more excited to be a part of this awesome team. In his spare time, Drew is a bassist, drummer and avid runner.
