Dan Stacy is the Owner and Executive Chef of Royal Fig Catering. With well over a decade and a half of catering and fine dining experience, Dan has worked at various restaurants and country clubs in the Austin and Houston areas. Arriving in Austin in 2008 from a 2 year stay in New York City, Dan cooked under Harold Dieterle, the winner of Top Chef, Season 1 at his restaurant, Perilla, in the West Village. He has also cooked for many celebrities at the famous Soho House members only hotel featured on the TV Show, “Sex and the City.”

A food enthusiast and experienced in marketing and sales, Kristen spent 10 years using her talents expanding arts-in-education programs in Cleveland, OH, New York City, and Austin. An experienced event planner, Kristen is known for her creativity and attention to detail, having facilitated conferences, corporate events, galas, dinner parties, large scale fundraisers, workshops, and hundreds of Austin weddings.

Jesse has spent his whole working life in the hospitality industry. After running multiple award winning restaurants and catering companies in the Nashville, Tennessee area, Jesse relocated to Austin several years ago to experience the city’s thriving food and event scene. Joining Royal Fig Catering over 4 years ago, Jesse has really grown to love the Austin food scene and wedding industry. A native Montanan and daughter of a Swiss Chef, Mona brings 15 years of experience in the hospitality industry to Royal Fig. Growing up in her parent’s German restaurant, Mona got a taste for what would turn into a life-long passion for people and food, very early on. Five years ago, Mona turned her career focus to coordinating events in the country club setting. She has worked at several prestigious country clubs including North Ridge Country Club and Austin Country Club where she planned a wide array of events including weddings, golf tournaments, charity galas, corporate seminars and receptions and holiday gatherings. You will find Mona to be personable, attentive and enthusiastic about all events no matter how small or large. Her focus is to take the guesswork and stress out of planning an event so that you can enjoy it, yourself, worry-free. With an outgoing and warm personality, her number one priority is ensuring that all of her clients and guests leave with a lasting, memorable experience.

She has orchestrated a wide range of events, including weddings, corporate and private parties, festivals, conferences, and fundraising galas. Alyson has based her career on developing strong relationships with her clients, thereby striving to truly understand their vision and needs. Kristin is the driving force behind Royal Fig’s limited service menu offerings. She found a love for event planning after studying International Business and Marketing in her home of Chesapeake, VA and moving to Austin. She has since gathered a great deal of experience in the Hospitality Industry while obtaining her Event Planning Certificate. With a special passion for wedding-related events, Kristin is enthusiastic and strives to ensure everything is perfect for everyone involved. Her skill set is further highlighted by a love for great food, atmosphere and decor and experience on marketing teams in the food service industry.

Laila moved to Austin from her small hometown near Corpus Christi six years ago, to start her own adventures and career in the food industry. Food has always been her passion and Austin’s colossal palate for exceptional food inspired her to attend culinary school and become part of it. Chef Laila has worked at an assortment of places throughout Austin to hone her skills, including The Hills of Lakeway Country Club, where she met Chef Dan many years ago. Laila chose to further her career in event catering by joining the team at Royal Fig has risen to become a valued leader among the culinary team.

JEFF BEECH – SOUS CHEF
Jeff was born and raised in the south, and his love for the food and culture are clear. Jeff started cooking in Memphis in 2002, and hasn’t left the kitchen since. His passion for food took him to many kitchens, where he learned techniques and skills to propel his career. Coming to Austin in 2006, Jeff became the sous chef for Cipollina Bistro in the Clarksville neighborhood, where he helped create a farm to table menu. After leaving Cipollina, Jeff worked at Whole Food Market for the next few years, working in the kitchens and produce departments until coming to Royal Fig full time.
Charlie, an Austin native, has never had a job that wasn’t in food service. Starting out in local cafes and sandwich shops, he found himself greatly enjoying the work. After graduating from Texas Culinary Academy in 2009 he began to search for restaurants focused on locally sourced, well thought out food. Charlie worked at several places in the south Austin area before landing a position on the opening team of 24 Diner under Chef Andrew Curren. Spending the next 5 years working in the high volume, food focused restaurant he developed his skill as a professional cook and eventually moved on to join the French style fine dining sister of 24 Diner, Arro, where he worked until joining the Royal Fig team in September of 2014. Charlie loves not only food and cooking, but also the hospitality industry as a whole and the people it attracts. “I’m lucky to work in an environment where I feel like I am a part of more than just the staff; this industry breeds friends and families, people I will know forever.”

A proud Texan, Mari Soto was born and raised in San Antonio and has lived in Austin for the past 9 years with over 13 years of varied culinary and leadership experience. Her love for food and people first began by spending time in the kitchen with her family. She is on the Board of Education for Austin Food and Wine Alliance and most recently worked with Whole Foods Market for the past 11 years where she expanded her passion for food, people, and community. As Food Sourcing Coordinator, she is committed to providing you with the highest quality ingredients from the Central Texas area. Her passion for food and the support of locally sourced ingredients as well as sustainable agriculture greatly contribute to her excitement towards joining the Royal Fig team. As Staffing Coordinator, her passion for people and creating exceptional experiences drives her to ensure you are provided with an exemplary team at every event.
