DAN STACY – CO-OWNER/EXECUTIVE CHEF

Dan Stacy is the Owner and Executive Chef of Royal Fig Catering.  With well over a decade of catering and fine dining experience, Dan has worked at various restaurants and country clubs in the Austin and Houston areas.  Arriving in Austin in 2008 from a 2 year stay in New York City, Dan cooked under Harold Dieterle, the winner of Top Chef, Season 1 at his restaurant, Perilla, in the West Village.  He has also cooked for many celebrities at the famous Soho House members only hotel featured on the TV Show, “Sex and the City.”  A well-rounded chef, he enjoys cooking with fresh seasonal ingredients in his venture, The Seedling Truck and The Seedling Pantry.

KRISTEN STACY – CO-OWNER

A food enthusiast and experienced in marketing and sales, Kristen spent 10 years using her talents expanding arts-in-education programs in Cleveland, OH, New York City, and Austin.  An experienced event planner, Kristen is known for her creativity and attention to detail, having facilitated conferences, corporate events, galas, dinner parties, large scale fundraisers, workshops, and hundreds of Austin weddings.

JESSE MARTIN – SENIOR EVENT COORDINATOR

Jesse has spent his whole working life in the hospitality industry. After running multiple award winning restaurants and catering companies in the Nashville, Tennessee area, Jesse relocated to Austin several years ago to experience the city’s thriving food and event scene. Joining Royal Fig Catering almost 3 years ago, Jesse has really grown to love the Austin food scene and wedding industry. Having done over 100 weddings and other special events with Royal Fig, he knows what it takes to make your event uniquely yours. From Tennessee to Texas, you get will get the full southern hospitality treatment, services and attention to detail.

JEFFERY SPRUCE – EVENT COORDINATOR

Jeffery is a native Houstonian who came to Austin with his family four years ago in order to experience the possibilities of living and working in such an incredibly eclectic and beautiful city. Jeffery brings 15 years of experience in the catering industry to the table, having worked in a multitude of roles from production, event planning and execution, to client service and event managing Jeffery’s “client first” and dynamic attitude, as well as his detail oriented and professional demeanor has made him a well respected professional in the Austin catering industry. Jeffery is definitely a “people person” and he has a way of leaving everyone involved in an event, from the client to the guests to the event staff feeling appreciated and completely taken care of. His ever present dedication to provide exemplary service as well as his extensive knowledge of what it takes to make an event run beautifully will ensure that your event with Royal Fig will be one of the most exquisitely memorable experiences you could hope for.

MONA HUNGRIA – EVENT COORDINATOR

A native Montanan and daughter of a Swiss Chef, Mona brings 15 years of experience in the hospitality industry to Royal Fig. Growing up in her parent’s German restaurant, Mona got a taste for what would turn into a life-long passion for people and food, very early on. Five years ago, Mona turned her career focus to coordinating events in the country club setting. She has worked at several prestigious country clubs including North Ridge Country Club and Austin Country Club where she planned a wide array of events including weddings, golf tournaments, charity galas, corporate seminars and receptions and holiday gatherings. You will find Mona to be personable, attentive and enthusiastic about all events no matter how small or large. Her focus is to take the guesswork and stress out of planning an event so that you can enjoy it, yourself, worry-free. With an outgoing and warm personality, her number one priority is ensuring that all of her clients and guests leave with a lasting, memorable experience.

DALLES NELSON – HEAD CHEF

As a transplant to Austin, Dalles grew up in Portland, Oregon. Coming from the bountiful northwest food scene Dalles tends to focus on simple yet elegant ingredients. After extended stays on the northern California coast Dalles was able to kick his culinary experience up as he returned to the northwest. Working under Executive Chef Eric Atlas at the prestigious Portland Golf Club to an extended stay with the area’s largest craft brewery Dalles was able to execute with his new focus on fine dining, beer and wine pairings and large banquets. Looking forward to the new seasons and abundant fresh ingredients, Dalles is very eager to get acquainted with Austin and the great food movement.

LAILA GARCIA – SOUS CHEF

Laila moved to Austin from her small hometown near Corpus Christi six years ago, to start her own adventures and career in the food industry. Food has always been her passion and Austin’s colossal palate for exceptional food inspired her to attend culinary school and become part of it. Chef Laila has worked at an assortment of places throughout Austin to hone her skills, including The Hills of Lakeway Country Club, where she met Chef Dan many years ago. Laila chose to further her career in event catering by joining the team at Royal Fig has risen to become a valued leader among the culinary team.
